
SHRIMP & GRITS (FLORIDA GULF STYLE)
Ingredients
- 1 pound Gulf shrimp peeled & deveined
- 1 cup stone-ground grits
- 2 cups water and 2 cups milk
- 2 tablespoons butter
- 1 cup shredded sharp cheddar
- 4 slices bacon chopped
- 1 tablespoon olive oil
- 2 green onions sliced
- 2 cloves garlic minced
- 1 teaspoon Cajun seasoning
- ½ Juice of lemon
Instructions
- Bring water to boil, stir in grits. Reduce heat, cover, and cook 20–25 minutes, stirring often. Finish with butter and cheese. In a skillet, cook bacon until crisp; set aside, reserving drippings. Add olive oil to skillet. Sauté garlic, then add shrimp with Cajun seasoning. Cook 2–3 minutes until pink. Return bacon, add green onions and lemon juice. Toss well. Serve shrimp mixture over hot cheesy grits.
