FETA AND SPINACH STUFFED MUSHROOMS

- 24 button mushrooms, cleaned and stemmed
- 8 ounces spinach, chopped
- 1 tablespoon fresh parsley, minced
- ½ cup crumbled feta cheese
- 2 cloves garlic, minced
- 1½ tablespoons extra-virgin olive oil
- Salt and black pepper
Instructions
Preheat oven to 400 degrees F. Heat oil in skillet on medium heat. Add spinach and sauté for 1 minute. Add garlic. Stir constantly until spinach is wilted, about 1 minute. Remove from heat. On a baking sheet, arrange mushrooms with cavity side up, single layer. Drizzle with olive oil and season with salt and pepper. In small bowl, use a fork to combine spinach/garlic mixture, feta and parsley. Each mushroom gets about a teaspoon of filling. Bake for 25 minutes or until slightly golden brown on top.
