SUN-DRIED TOMATO PARMESAN SPINACH CHICKEN

- 6 thin boneless and skinless chicken breasts
- 2 cups spinach, chopped
- 4 garlic cloves, minced
- 3 tablespoons extra-virgin olive oil
- 1 cup heavy cream
- ¼ cup oil-packed sun-dried tomatoes, roughly chopped
- ½ cup Parmesan cheese
- Salt and black pepper
Instructions
Salt and pepper both sides of thin chicken breasts. Drizzle 2 tablespoons olive oil in skillet over medium-high heat. Add chicken and pan sear for 4-5 minutes. Repeat on other side for 4 more minutes. Remove chicken from heat and set aside. Reduce heat on skillet and add 1 tablespoon olive oil. Add garlic, sauté for 30 seconds or until it starts to brown. Add sun-dried tomatoes, spinach, heavy cream and Parmesan cheese. Mix thoroughly. Return chicken to pan with sauce and simmer for 1 minute, spooning sauce over chicken.
