WATERMELON SALAD

- ¼ cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- ½ teaspoon salt
- 3 cups seedless watermelon, cubed
- 1 cup cucumber, chopped
- 1 cup crumbled feta cheese
- ½ cup red onion, thinly sliced
- ½ cup chopped mint
Instructions
In small bowl, whisk together olive oil, vinegar and salt for dressing. In a serving bowl, combine watermelon, cucumber, feta, red onion and mint. Add dressing and toss to combine.
