SUMMER SUSHI ROLL

- 4 sheets tapioca paper
- 1 avocado, sliced in pieces lengthwise
- ½ cucumber, peeled and julienned
- ½ medium carrot, peeled and julienned
- 4 leaves Bibb or butter lettuce, halved
- 8 large shrimp, cooked and butterfly sliced
- 4 pieces imitation crabmeat
- 2 cups warm water
Instructions
Pour the water in big bowl and soak tapioca paper until it softens. Remove softened paper and place on kitchen towel. Let rest for half a minute. Align two shrimp in middle of paper. Outer part of shrimp should face down. Arrange a leaf of lettuce on top of shrimp. Top with pieces of avocado, carrots, cucumber and 1 piece of crabmeat. Press filling with fingers, then fold bottom end of tapioca paper over top of filling. Roll halfway. Fold edges of paper inward, continue rolling until fillings are secured. Folding the ends will close both edges, ensuring fillings are securely wrapped. Repeat steps. Slice each roll in the middle and transfer to serving plate. Enjoy with favorite dipping sauce.
