EASTER RICE CUSTARD PIE

- 3 large eggs
- 2 cups milk
- 1 cup cottage cheese
- ½ cup cooked rice
- ½ cup sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract
- ⅛ teaspoon ground nutmeg
Instructions
Preheat oven to 350 degrees F. Beat eggs, milk, cottage cheese, sugar, vanilla, almond extract, rice and nutmeg with electric mixer until well blended. Pour into 9 1/2-inch pie plate. Bake 30 to 35 minutes. Put knife in pie center; pie is done if knife comes out clean. Serve warm or chilled.
