Pumpkin Cheesecake

- 2 9-inch prepared chocolate pie crusts
- 3 8-ounce packages of cream cheese
- 1 cup granulated sugar
- 1 cup sour cream
- ½ cup crushed pistachios
- Chocolate syrup
- 1 teaspoon vanilla extract
- 1 tablespoon pumpkin pie spice
- 6 eggs
- 1 cup pumpkin purée
Instructions
Preheat oven to 375 degrees. In large bowl, beat cream cheese and sugar until smooth. Blend in sour cream, vanilla extract and pumpkin spice. Beat in eggs one at a time. Completely blend in pumpkin purée. Pour filling into both pie crusts. Bake for 45 minutes or until filling is set and firm. Allow to cool. Sprinkle crushed pistachios over top of pies; drizzle with chocolate syrup.
