Chocolate Pecan Pie

- 1 9-inch refrigerated pie crust
- ⅓ cup butter
- ⅔ cup granulated sugar
- 3 eggs
- ¼ teaspoon salt
- 1 cup light corn syrup
- 1 teaspoon instant coffee powder
- 1¼ cups chopped pecans
- 1 cup semisweet chocolate chips
- 2 tablespoons semisweet chocolate chips, for garnish
- ½ cup heavy cream
- ¼ teaspoon vanilla extract
- 1 tablespoon confectioners’ sugar
Instructions
Preheat oven to 325 degrees. Roll out refrigerated pie crust in 9-inch glass pie plate. Melt butter in medium saucepan over low heat. Stir in sugar; let mixture cool. In large bowl, beat eggs well. Stir in salt, corn syrup and melted butter mixture. Add coffee powder. Stir in chopped pecans and 1 cup chocolate chips. Pour mixture over crust. Bake 55 to 65 minutes until deep-golden brown and filling is set. Place pie on rack to cool at room temperature. Garnish with 2 tablespoons chocolate chips. Cover and let stand 6 hours before serving. Combine cream, confectioners’ sugar and vanilla extract in bowl; whip until stiff. Garnish pie slices with whipped topping.
