Ham & Cheese Egg MuffinsPrint Recipe
- 6 eggs
- 1/2 cup chopped red peppers and green onions
- ¼ cup milk
- 4 ounces shredded cheddar cheese
- Salt and pepper to taste
Preheat oven to 350 degrees. Spray muffin tin with cooking spray. Whisk together eggs and milk until fluffy. Stir in 2 ounces cheese, peppers, onions, salt and pepper. Divide egg mixture evenly between 6 muffin tins. Sprinkle remaining cheese over each filled cup. Bake until eggs are set, about 25-30 minutes. Cool slightly and serve.
