Avocado Toast with Soft-Boiled EggPrint Recipe
- 2 eggs
- 2 slices whole-grain bread
- 1 large avocado
- ⅛ teaspoon sea salt
- ⅛ teaspoon ground black pepper
For soft-boiled eggs, bring water to boil over high heat in saucepan. When water rapidly simmers, lower it to medium-high. Put eggs in water with slotted spoon, 1 at a time. Cook 6½ minutes. Remove eggs, place into ice bath for 2 minutes. Peel eggs. Toast bread slices and set aside. In small bowl, mash avocado and spread evenly over toast. Sprinkle avocado spread with salt and pepper. Place 1 egg over each piece of toast and gently slice open, covering toast.
