SWEET POTATO CASSEROLE

- 3 medium-size sweet potatoes
- ½ cup white sugar
- 2 eggs, beaten
- ½ teaspoon salt
- 4 tablespoons butter, softened
- ½ cup evaporated milk
- 1 teaspoon vanilla extract
- 1 cup packed brown sugar
- ⅔ cup all-purpose flour
- 6 tablespoons butter, softened
- 1 cup chopped pecans
Instructions
Preheat oven to 425 degrees. On a baking sheet, prick sweet potatoes all over with a fork. Bake until tender, 45 to 50 minutes. Let cool, then mash. Preheat oven to 325 degrees. In large bowl, mix sweet potatoes, white sugar, eggs, salt, 4 tablespoons butter, milk and vanilla extract. Mix until smooth. Transfer to 9×13 baking dish. In medium bowl, mix brown sugar and flour. Cut in 6 tablespoons butter until mixture is coarse. Stir in pecans. Sprinkle over sweet potato mixture. Bake 30 minutes, or until topping is lightly brown.
