BROCCOLI CAULIFLOWER CASSEROLE

- 2 cups broccoli
- 2 cups cauliflower
- 2 eggs
- ½ cup mayonnaise
- ½ cup chopped onion
- ½ cup shredded cheddar cheese
- ½ cup shredded Parmesan cheese
- ½ cup butter, melted
- 1 package crackers, crushed
Instructions
Preheat oven to 350 degrees. Put broccoli and cauliflower in saucepan and pour enough water to completely cover vegetables. Bring to a boil and cook until tender, 3 to 4 minutes. Drain and mix in 11×17 baking dish. Beat eggs in a bowl until creamy. Mix mayonnaise, onion and cheddar cheese into eggs. Pour over vegetables. Pour melted butter over broccoli-cauliflower mixture and top with Parmesan cheese. Sprinkle crushed crackers over entire dish. Bake until browned and bubbling, about 40 minutes.
